with Spinach & Feta Cheese
These Mediterranean-style pies are a vegetarian alternative to fall in love with!



2 pkgs. Round & Thin Pizza Crust
2 Tbsp. olive oil
1 medium sized onion, diced
3 cloves of garlic
12 oz. frozen spinach
Salt and pepper
4 oz. cream cheese, room temp
1 egg
6-8 oz. feta cheese, room temp
Zest of one lemon
2 Tbsp. fresh chopped parsley
1/2 tsp. of nutmeg
STEPS

Preheat oven to 425°F.

Add oil to skillet on medium high. Add onions and garlic and cook until soft (about 3 min). Add spinach and 1/2 tsp. of salt. Once cooked, turn off heat.

In a bowl mix cream cheese, egg, feta, lemon zest, parsley, nutmeg and pepper. Once spinach mixture is cool, add to cheese mixture in bowl.

Unroll refrigerated Round & Thin Pizza Crust on parchment paper and cut both packages of dough into quarters. Place on piece of parchment paper on baking sheet and place 4 pieces of dough on paper. Scoop filling onto bottom pie-shaped dough piece. Lay a second piece of dough on top and pinch seams together. Repeat for remaining pies (uses two packages of dough to make 4 large hand pies).

Bake for 15 minutes until golden brown.
