with Smoky BBQ Chicken
This flatbread is the perfect summer appetizer with its smoky taste and hearty ingredients.
1 pkg. Flatbread
1 Tbsp. olive oil
1 tsp. salt
1/2 cup smoky BBQ sauce
1 1/2 cups rotisserie chicken, pulled off the bone
1/4 cup red onion, thinly sliced
6 oz. fresh Mozzarella ball
4 scallion tops, chopped
Salt and pepper to taste
1/2 cup favorite chunky corn salsa
Preheat grill to medium heat. Prepare all toppings and place on tray near grill for easy access.
Unroll refrigerated Flatbread and brush lightly with olive oil and sprinkle with salt. Transfer the dough to the grill with parchment side up. Allow the dough to cook until stable and parchment can easily be peeled off the top.
Once paper is removed, spread the BBQ sauce on the dough and add chicken, onion, mozzarella, and salt and pepper to taste. Turn down the heat and close the lid until cheese is melted.
Once all cheese is melted, remove from the grill, sprinkle with scallion tops and serve with salsa on the side.
