with Caramelized Onions & Goat Cheese
These BBQ chicken bites sing with sweet onion and creamy goat cheese on our authentic pizza crust!
1 pkg. Family Size Pizza Crust
1 onion, diced
1 tsp. olive oil
Egg wash (1 egg and 2 Tbsp. water, beaten)
1/2 cup Parmesan cheese, grated or shredded
2 cups rotisserie chicken, torn into small pieces
1 cup sharp cheddar cheese, grated
1 cup BBQ sauce – your favorite brand
1-2 tsp. Sriracha sauce (to taste)
1 tsp. garlic powder
2 oz. goat cheese
1 bunch scallions, chopped
STEPS

Preheat oven to 400℉.

Sauté chopped onions in olive oil over medium-low heat for about 20 minutes or until tender and slightly golden. Set aside.

Unroll refrigerated Family Size Pizza Crust on enclosed parchment paper and place on a baking sheet. Cut dough into 12 evenly sized squares. Cut each square diagonally to form 24 triangles.

Brush each triangle with egg wash and sprinkle with grated Parmesan cheese. Bake for 8 minutes or until the dough begins to slightly brown.

Meanwhile, shred the rotisserie chicken meat in a bowl. Add cheddar cheese, BBQ sauce, Sriracha sauce, and garlic. Mix until well combined.

Top each partially baked triangle with 1 teaspoon of chicken mixture and a pinch of caramelized onion. Top with a few crumbles of goat cheese.

Bake for an additional 5-7 minutes or until browned and bubbly. Plate and garnish with chopped scallions. Serve warm.
I have made this as written as appetizers and as a whole pizza for a meal. Such great flavors make this delicious served hot, cold and at room temp.
