Bacon, Mascarpone and caramelized onions... a heavenly combination!
1 pkg. Family Size Pizza Crust
4-5 medium red bliss potatoes
1/2 lb. smoked bacon (e.g. Applewood)
4 cups onions, sliced into thin rings
2 cloves of garlic
1/2 tsp. Savory Seasoning
1/2-3/4 tsp. salt
Freshly ground white pepper
8 oz. Brie cheese (rinds intact)
3 oz. Mascarpone

Preheat oven to 425°F.

Steam or boil the potatoes until just done. Cool and slice into 1/4 inch slices.

Cut bacon crosswise into 1/4 in. pieces. Transfer to a skillet and cook for 2-3 minutes. Add onions, garlic, Savory Seasoning, salt, and pepper. Cook until bacon is done and drain off any excess fat.

Unroll refrigerated Family Size Pizza Crust on the enclosed parchment paper and place on a baking sheet. Arrange potato slices over pizza. Spread the onion and bacon mixture evenly over pizza dough and potatoes. Top with slices of Brie. Dot with Mascarpone.

Bake for 15-20 minutes or until cheese is melted and crust is lightly browned.
