WHAT ARE THE ADVANTAGES OF BAKING JUS-ROL DOUGH ON BAKING PAPER?
The benefits of baking with baking paper are several:

DO I NEED TO ROLL THE DOUGH WITH A ROLLING PIN?
Just unroll the dough with the baking paper. It is already made to the perfect size and thickness and is intended to be baked with the baking paper.
CAN I FREEZE THE DOUGH?
Yes, our Pie dough is freezable. We do not recommend freezing our Pizza or Puff Pastry doughs as it may deter their best baking qualities. All doughs store well in the refrigerator, usually up to 4 weeks after purchase. Please check the ‘use by’ date.
IS THE PRODUCT EVER FROZEN?
No, Jus-Rol products are never frozen.
HOW LONG WILL BAKED ITEMS KEEP IN THE REFRIGERATOR?
This depends largely on the ingredients used in the baked items. Generally, up to 48 hours.
CAN I FREEZE THE DOUGH AFTER BAKING?
This is not recommended for your best taste experience
CAN JUS-ROL DOUGH TEAR WHEN YOU UNROLL IT?
Jus-Rol dough is less likely to tear if it is kept on the enclosed baking paper. It is also best to let the dough warm up for a few minutes at room temperature prior to unrolling.
CAN THE DOUGH BE BAKED IN THE MICROWAVE?
Microwave use is not suitable for raw dough. A toaster oven can be used but should be monitored as baking times will be longer than stated for conventional or convection ovens.
WHEN USING JUS-ROL, DO I NEED TO SPRAY OR GREASE THE BAKING PAN?
Jus-Rol dough is ready to bake right out of the package. Simply unroll the dough and place it on the pan with the included baking paper. No cooking spray or grease is required.
HOW DO I KNOW HOW THICK THE DOUGH SHOULD BE?
It is pre-rolled on baking paper to the perfect thickness. Just unroll with the baking paper on a baking tray/sheet.
WHICH OVEN RACK SHOULD I USE TO BAKE JUS-ROL PRODUCTS?
Always place Jus-Rol dough on the middle rack of the oven unless otherwise specified by the recipe.
HOW DO I MAKE BAKED ITEMS LOOK MORE GOLDEN BROWN?
Before baking, brush the dough with egg wash or olive oil. (Egg wash is made by beating 1 raw egg with 2 Tbsp. of water with a fork or whisk.)
WHAT IS THAT PLASTIC DISC FOUND INSIDE SOME JUS-ROL PACKAGING?
The packaging for Jus-Rol yeast dough products contain a special valve that allows the product to “breathe”. This keeps yeast active and ensures that Pizza Crusts and Flatbread rise and bake to perfection.
WHICH JUS-ROL DOUGHS CONTAIN YEAST?
Jus-Rol Pizza and Flatbread doughs contain yeast. Yeast has been used by artisan bakers for centuries to make dough rise.
CAN I EAT THE RAW DOUGH?
Please do not eat our raw dough.
WHAT IS THE PERFECT TEMPERATURE FOR BAKING JUS-ROL DOUGH?
Baking temperature for conventional gas or electric oven:
425°F – for Puff Pastry, Family Size & Round & Thin Pizza and Flatbread
370°F – for Pie Crust dough (or according to individual recipe instructions)

400°F – for Puff Pastry, Family Size & Round & Thin Pizza and Flatbread

IS THE BAKING PAPER OVEN SAFE?
Yes, you can bake with the baking paper up to 425°F.
WHAT IS BAKING PAPER?
Baking paper, also called “parchment” paper, is traditionally being used in baking to both keep the pan clean and keep the baked goods from sticking to the pan.
WHY DOES THE BAKING PAPER TURN BROWN WHILE BAKING?
As compared to other baking paper, it is likely that this baking paper will get a little browner. It is thinner than most store-bought baking paper sheets. However, this does not impact performance in any way.

Our dough does not qualify as Kosher.

As we use high-quality wheat flour as a main ingredient in our doughs, they are not gluten-free.

Yes, all Jus-Rol dough options are appropriate for Vegetarians.
ARE JUS-ROL PRODUCTS SUITABLE FOR A VEGAN DIET?
Jus-Rol Puff Pastry, Pizza, Pie and Flatbread dough are vegan-friendly.
However, our Crescent dough and Poffitz pancake bites are not suitable for vegans. Our Crescents contains milk and Poffitz contains egg and milk.

Our dough is made from premium ingredients but cannot be claimed as organic.

WHAT IS DATEM?
It is an emulsifier that helps strengthen the dough for a satisfying, chewy texture.
WHAT IS ASCORBIC ACID?
It basically is a form of vitamin C and helps with mixing the dough and strengthening it.
WHAT IS SODIUM ACID PYROPHOSPHATE, AND WHY IS IT USED?
It is one part of the raising agent that is used in combination with baking soda so the dough can rise to the best results.
WHAT ARE MONO- AND DIGLYCERIDES?
They are emulsifiers that help mix smoothly materials that don’t naturally mix well together, such as water and oil. They improve texture and stability, prevent separating, and extend shelf life. They occur naturally in some foods that contain plant or animal fats or oils. They are produced commercially by heating animal fat or vegetable oil with an alkaline catalyst.
WHAT IS WHEAT STARCH?
Wheat starch is used in baking to make products gain more volume and softness. We use wheat starch to help with the unrolling of the dough. Wheat starch is simply a starch made from the endosperm part of the wheat grain.
WHAT IS WHEAT GLUTEN?
Wheat gluten is a protein found in wheat. Gluten allows the bread or dough to have its texture and to rise during baking. It gives the dough that elastic feel. It strengthens the dough and holds the gas bubbles produced by the yeast to make the bread rise higher. We use wheat gluten to ensure we deliver the right texture throughout the product's shelf life.
WHAT IS XANTHAN GUM?
Xanthan gum is an effective thickening agent and stabilizer to prevent ingredients from separating and to control the moisture inside the dough formulation. Made from corn, xanthan gum is produced when sugar gets fermented by bacteria. It derives its name from the species of bacteria used, Xanthomonas campestris.
WHAT IS LACTOSE?
Lactose is a natural sugar that's found in milk. Lactose is used in bakery goods for enhancing browning and reducing sweetness, as it is less sweet than table sugar.
HOW MUCH SUGAR IS IN THE PRODUCT?
We use very little sugar in our products. All our doughs contain 1 gram per serving or less.
WHY IS ALCOHOL USED IN YOUR PRODUCT? HOW MUCH IS USED?
A trace amount of alcohol (ethyl alcohol) is used to extend refrigerated shelf life. However, the alcohol bakes off completely during the baking process.
DOES YOUR DOUGH CONTAIN ALLERGENS SUCH AS GLUTEN, DAIRY, EGG, SOY, SESAME, LEGUMES, AND NUTS?
Our Puff Pastry dough, Round & Thin and Family Size Pizza dough, Pie Crust dough, and Flatbread dough contain wheat.
Our Crescent dough contains wheat and milk.
None of our pizza and pastry doughs contain nuts of any kind (peanuts or tree nuts), eggs, legumes, or sesame, nor are they processed on the same production lines or shared equipment.

Pizza & Flatbread
WHAT IS THE DIFFERENCE BETWEEN PIZZA DOUGH AND FLATBREAD DOUGH?
Our Flatbread dough contains less raising agent than our pizza doughs so it's thinner, crispier, and won't rise as much. It's an authentic "Old World" recipe, traditionally served with lighter ingredients like sour cream and vegetables instead of tomato sauce and cheese. Flatbread makes a great alternative to high-rising pizza crust for people who want to cut down on carbs.
HOW DO I MAKE MY PIZZA CRISPIER?
If you like your pizza crust with an extra crunch, you can pre-bake it without toppings (or only tomato sauce) for about 5 minutes in the preheated oven.
If you plan on topping your pizza with a lot of juicy meats and vegetables, brushing on a thin layer of olive oil base can help with containing the moisture during baking.

HOW DO I USE A PIZZA STONE WITH YOUR DOUGH?
Preheat the stone in the oven first. Carefully add corn starch and place the dough on the stone without the baking paper. Bake per package instructions.
Pie Crust
HOW DO I “BLIND BAKE” A PIE CRUST FOR A COLD FILL PIE?
Let the pie dough sit on counter for 15-20 minutes, then unroll carefully and flip into a pie pan. Flute the edges as desired. Cover the dough with removed baking paper and weigh down with pie weights or dry rice or beans. Blind bake about 15 minutes at 425°F or until light brown. Then take out of oven and remove paper and weights. Bake for an additional 3-5 minutes. Cool on a cooling rack.
If you don’t have or want to use pie weights, carefully prick the bottom and sides with a fork many times to prevent air bubbles. Don’t use a fork if your pie will be filled with a super moist filling, as the tiny holes will allow filling to soften the dough.
Note: You can store used dry beans or dry rice in a special container and mark it as pie weights. You can use them for additional blind baking sessions, but you should not consume them.

THE PIE CRUST GOT CRACKS WHILE UNROLLING, WHAT CAN I DO?
This is no problem at all! With wet fingers, simply press together the breaks in the crust. Then, holding by the baking paper, flip the dough over into the pan and remove the baking paper before filling and baking.
THE PIE CRUST ISN’T AS FLAKY AS THE ONE I AM USED TO. WHY IS THAT?
The Jus-Rol Pie Crust dough is sturdy and versatile, as it can also be used in Quiche- and Tarte recipes and holds up great. We do not use lard. Cutting slices becomes “as easy as pie”.
WHY IS THE PIE CRUST SOLD AS “ONE THICKER CRUST”?
Our new Jus-Rol Pie Crust dough uses one thicker crust to meet the need for a more versatile and easy-to-handle dough. The thicker crust makes it more durable and gives it a homemade feel. Also, it helps to reduce food waste (most pie recipes need just one crust).Puff Pastry

No, we do not recommend refreezing the product once thawed.
CAN I SEND POFFITZ IN MY CHILD’S SCHOOL LUNCH?
Yes, absolutely! Poffitz can be defrosted and packed in a lunchbox without a cold pack; however, do consume within 24 hours.
WHY DO THE TOP AND BOTTOM OF THE PRODUCT LOOK DIFFERENT?
Poffitz are baked in a little mold, like how a waffle is made. The batter is poured into a form, closed and baked, then flipped, so the top and bottom of a Poffitz will look a little different.

Serving sizes will vary by recipe. However, below are some general serving guidelines:- Family Size Pizza dough, formerly Classic dough, typically fits a rectangular baking sheet 10” x 15” or larger
- Round & Thin Pizza dough, formerly Bistro dough, typically fits best on a pizza stone or pan that’s 12” or larger
- Flatbread dough typically fits a rectangular baking sheet 12” x 16” or larger
- Puff Pastry dough typically fits a rectangular baking sheet 10” x 15” or larger. It can also be cut, folded or formed into different sizes depending on the recipe.
