Steps
- Preheat the oven to 400˚F and set out the pie crust to rest at room temperature for 20 minutes.
- Place the dough in a 9-inch pie dish paper side up, then carefully remove the paper. Press dough into the dish, pinching/fluting around the edges of the pan. Brush the edges of the pie crust with egg wash to prevent burning.
- In a large bowl, toss the filling ingredients until very well combined. Add in the center of the pie dish, spreading into an even layer.
- In a medium bowl, combine the crumb topping and using your hands or a pastry cutter, mix until a crumb forms. Sprinkle evenly over the top of the pie.
- Transfer to the middle rack of the oven and bake until the pie crust and crumb topping are deep golden brown, and the filling begins to bubble, 45 to 55 minutes. Transfer to a cooling rack to let cool completely before slicing and serving. It’s tempting to slice while warm, but it holds its form much better when cooled.
- To serve, slice into thick pieces and top with vanilla ice cream, if desired!
