For the Quick Caramelized Onions:
1-2 tablespoons extra virgin olive oil
1 large yellow onion, halved and thinly sliced
½ teaspoon kosher salt
½ teaspoon ground black pepper
2 tablespoons balsamic vinegar
For the Pizza:
1 JusRol pizza Crust
¾ cup fig preserves or fig butter
¾ cup crumbled blue cheese
4 figs, sliced
1 handful arugula
Balsamic glaze
Flaky salt

Steps
- Preheat the oven: Set the oven to 425°F. Line a baking sheet with parchment paper and place the pizza crust on top.
- Caramelize the onions: In a large skillet, heat the olive oil over medium heat. Add the onions, salt, and pepper. Cook, stirring occasionally, until the onions are softened and golden in spots, about 10 minutes. Stir in the balsamic vinegar and continue cooking for another 2–3 minutes, until glossy and deeply caramelized. Remove from heat.
- Assemble the flatbread: Spread the fig preserves evenly over the crust. Top with the caramelized onions, crumbled blue cheese, and sliced figs.
- Bake: Transfer to the oven and bake until the crust is golden and the cheese is melted, 10-12 minutes.
- Finish and serve: Remove from the oven and top with a handful of fresh arugula. Drizzle generously with balsamic glaze and sprinkle with flaky salt. Slice into 16 small squares and serve warm.
